Celsius, Fahrenheit and gas mark explained

Recipes from different countries use different oven scales. The UK and much of Europe use degrees Celsius, the US uses degrees Fahrenheit, and older British recipes use gas marks. The exact formula between Celsius and Fahrenheit is °F = °C × 9 ÷ 5 + 32, but in baking the values are usually rounded to the nearest familiar setting — for example 180°C is technically 356°F but written as 350°F. Gas mark 4 sits at that same moderate point used for most cakes and roasts.

If your recipe is for a conventional oven but you have a fan (convection) oven, lower the temperature by about 20°C, since the moving air cooks food faster.
